Our cook is responsible for the overall food production and sanitation of the kitchen. S/he works under the direction and supervision of the Program Manager and the Operations Coordinator.  This is a true culinary position as we prepare our menus from scratch daily.   The cook is responsible for following standardized recipes in accordance to Jewish Dietary Laws and requirements of HACCP as dictated by funding agencies and Health Department.  S/he will accurately and efficiently prepare, portion, cook and present a variety of hot and/or cold food items.  The cook must be flexible in station assignments.


Qualifications:

  • 2 years of experience in volume food production. 
  • Culinary Arts degree or equivalent is a plus
  • Must have valid CA driver’s license and proof of Insurance
  • Travel to multiple work sites  may be required
  • Ability to follow recipes in a HACCP Format.
  • Must be able to lift 40 pounds with or without assistance
  • Must be able to bend, reach, stoop, push, and pull, raise arms above head, twist and grip items with or without assistance
  • Must be able to stand for long period of time
  • Must be able to use both hands and capable of performing repetitious duties
  • Ability  to read, write and speak English
  • Must be able to read and follow a recipe unsupervised 
  • Must be able to correctly and safely use standards kitchen equipment. Chef’s knives; Convection ovens; Meat slicing machines, steamers, mandolins, grills, and broilers etc.
  • Food Handler Certification from Los Angeles County Department of Health Services.
  • Knowledge of kosher dietary laws a plus
  • Must pass a criminal background check (Live Scan fingerprinting) prior to beginning employment

Responsibilities/Essential Functions:

  • Works with Lead Cook/ Operations Coordinator to prepared regular program menu items detailed in food production order following HACCP format recipes
  • Prepares food for special orders such as caterings, purees, box lunches, special senior programs
  • Take over Kitchen coordinator duties  when s/he are absent 
  • Responsible for all food production baking, cooking, dicing, slicing, and record keeping, reporting any needs, issues to HKK manager.
  • Keep records of number of meals and temperatures according HACCP
  • Record  and maintain all daily food temperature record logs
  • Assist with pre-preparation and serving as needed
  • Prepares food according to menu, recipes and special events as needed
  • Counts food portions according to daily production
  • Observes all requirements of Jewish Dietary Laws and HACCP requirements of funding agencies. 
  • Makes sure FIFO is follow in all products utilized in food production.
  • Makes sure all food temperatures are accurate before food leaves kitchen.
  • Must understand read and follow the menu according health and grants rules
  • Inventory foods needed for menu production
  • Participate in the general sanitation /cleaning of the HKK
  • May be asked to deliver or drive delivery truck as needed
  • Other duties as assigned
